Beauty is in the eye of the beholder. ~ Plato
Eh. I’m not entirely sold on that idea, at least not when it comes to food—for people, yes. Especially babies. I mean seriously people … not all babies are cute. Just sayin’. But when it comes to food, most people are taken in by presentation. Case in point, how many friends do you have that constantly snap photos of their food for social media? Not counting the ones who actually write about it for a living, how many? A lot. I know. I know. But, since we all know food doesn’t have to be pretty to taste good (right, we all know this?!), I’m gonna go ahead and give Krusteaz gluten free wild blueberry muffin mix, a big thumbs up. Because even though they failed to turn out big and fluffy, and truthfully, the color is a little light, the flavor is outstanding.

And here’s how I know: one, I made a couple dozen, let them cool, froze them, then mailed them to my daughter in college on the East Coast. And she loved them. Two, the extra ones I had Eric take into work and give to the security guard (who happens to be one of two people that I actually like at his office–wait, no, there’s five. I like five people.) and they were all gone before lunch. So there you have it. The muffins really are delicious and because you don’t have to commit to purchasing gluten-free flour (yet) or deciding which one to buy, this mix is the perfect way to give gluten-free baking a try. So try it. You’ll like it, even if they won’t win you a beauty contest ; )
