Grilled Peaches & Arugula Salad

Peaches. And no, I’m soooo not gonna break into song … I’ll let The Presidents of the United States own the whole singing about peaches thing. But seeing as National Peach Month (August) is coming to a close, I will pay a little tribute to the fuzzy fruit. And no (again) I am not going to give you a recipe for peach pie I mean just google it … not that you couldn’t google grilled peaches, but, once you read this, you won’t need to.

Peaches (and most fruit, except maybe bananas) are great on the grill because they’re loaded with water and when “just” ripe, the flavor literally bursts when heated. 

Grilled peaches are great served with vanilla ice cream and or cinnamon ice cream seriously, try it. Add a little brandy and some basil and you’ll be having a party in your mouth. Yes, I did just say that … but grilled peaches are even better when served as an addition to some spicy greens. So try this tonight it is, after all, the year of the peach 😉 Am I right? OK. Maybe I’m wrong, but like I said, it is National Peach Month so why not!

Grilled Peaches and Arugula Salad

PREP TIME: 10 minutes | COOK TIME: 10 minutes

  • 3-4 just ripe peaches
  • 4-6 cups arugula (or a combination of greens to your liking)
  • Vegan feta crumbles
  • Walnuts
  • Grape seed oil
  • Balsamic vinegar

Heat grill to medium, carefully not to get it too hot. Slice peaches into wedges, brush with grape seed oil, and set aside. Arrange arugula on plates and grill each side for 3-5 minutes depending on thickness. Once done, remove from the grill and place directly on greens. Sprinkle with desired amounts of vegan feta, walnuts, and drizzle with balsamic and a touch of grape seed oil. Salt and pepper as you wish. Serve alongside some rustic bread OR, serve directly on top of the bread. Enjoy!
